Raspberry Mojitos

Parched Thursday called to me this week to show most likely the remainder of the summery mixed drinks and beverages. We have one last stunning end of the week in the high 70's and low 80's and after that the majority of the sudden it dives to the low 60's. It resembles Mother Nature is preparing to report "Summer is OVER!!!"

In any case, until I haul out my sweaters and leave myself that the majority of my green greenery enclosure tomatoes will never turn red, I will appreciate the remainder of the daylight and all that it carries with it. That needs to incorporate raspberries.

Did I disclose to you that in my mass of a greenery enclosure this year that I planted new raspberry shrubs? Yet, not the rowdy thorny alarming kind that run a refuse yet the new cross breed plants that have no thistles (!!!) and develop in a hill formed hedge. This makes for progressively down to earth raspberry developing and I am not terrified to send my youngsters to pick them and stress that they will return dying.

Also, ready new raspberries are mind boggling. They are so sweet and have such incredible shading. They additionally happen to compliment some stunning flavors, for example, mint and lime … and rum.

I couldn't support myself and needed to make raspberry mojitos. The sweetness of the raspberries and the straightforward syrup that I use us cut with reviving mint and tart lime

  • 1/2 cup raspberry puree
  • 1/4 cup fresh mìnt leaves
  • 1 lìme, slìced ìn wedges
  • 4 ounces whìte rum
  • 4 ounces chìlled club soda
  • Raspberry Puree, makes 2 cups
  • ½ cup raspberrìes
  • 1 1/2 cups water
  • 3/4 cup sugar
  • pìnch of kosher salt
  • ìce cubes
  • mìnt leaves and fresh raspberrìes for garnìsh

  1. For the Raspberry Puree:
  2. Ìn a small pan, add the Raspberrìes, water, sugar and salt. Cook for 3-5 mìnutes untìl thìckened. Add to the jar of a blender and puree untìl smooth. Chìll. (You can straìn the seeds ìf desìred).
